Where's The Beef?

By: 0

Alright Paleo people,

We’ve got another chance to purchase grass fed and finished beef!  Here’s the deal:

We get our beef from Freestone Ranch out in Sonoma County.

Our contact person there is Misty.  You may email her to opt in at: Misty@freestoneranch.com

If you decide you would like to order, the minimum order size is 1/4 of a cow (If you would like a smaller portion, feel free to split with another member, I will leave finding that other member up to you).  This generally comes out to about 100lbs of beef (you will need an extra freezer).  Last time we ordered, the price came out to about $380 per quarter including butchering.

Once the beef is harvested, it will be sent to a butcher (you can choose to use your own or use theirs, if you use theirs, I will pick it up for you) the butcher that Freestone uses then hangs the beef to age for 30 days.  The aging intensifies the flavor significantly.  Following the hanging the beef is butchered to your standards (you will be sent a cut and wrap preference sheet once you contact Misty).  For what it’s worth, if you order dry aged grass fed beef at Whole foods, it comes in at more than $20/lb.

The beef will be ready in October.

If you have any questions or if I have left anything out, please feel free to email me: ryan@winecountrycrossfit.com or contact Misty above.
