Monday Meal Prep – Greek Meatballs

Did I mention that we have been on a meatball kick in our house?  Of all the meatballs we have tried, this is by far our favorite! The combo of the grass fed ground beef with pasture raised lamb with mint it a winner. And, the Romesco sauce is to die for! In fact I can’t believe I made something so tasty.

The Romesco sauce has a base of roasted red peppers, almonds and garlic, parsley and olive oil. The recipe makes a hearty amount so every time we’ve made it there have been leftovers. This sauce is good on eggs the next morning, and even good on steamed broccoli.
