Monday Meal Prep: Paleo Pancakes

This paleo pancake recipe is all over the paleo internet world, and it’s hard to know who might have been the first to create it. It’s so simple that it’s easily copied and shared…my bet is that Mark Sisson, from Mark’s Daily Apple http://www.marksdailyapple.com/, was the originator, but who knows? These are even easier than “conventional” pancakes to whip together! I like to eat them dry- no syrup needed!

3 Ingredient Banana Pancakes

  • 2 over ripe bananas, mashed
  • 2 eggs
  • 1/2 cup almond butter or peanut butter
  • dash of cinnamon (opt)
  1. With a fork, whisk together all ingredients until combined but don’t over mix…a few lumps of banana are ok.
  2. Cook on a  griddle greased with coconut oil, or in a pan on low-medium heat.  The pancakes will be thinner than usual pancakes.
  3. Serve with fresh banana slices, walnuts and other fruit. You can drizzle maple syrup if desired but the pancakes are already sweet!
