Isabel and PANCAKES!!!

It’s been a couple of weeks since I posted any recipes, but I was introduced to this one by one of our members a couple of weeks ago and HOLY PANCAKES IT’S DELICIOUS!!!!

Paleo Pancakes

Ingredients:

2 large green plantains
4 eggs
2 tsp vanilla
3 Tbsp extra virgin coconut oil
1/8 tsp salt
1/2 tsp baking soda
extra coconut oil for frying

1. Quarter plantains and peel. Please pieces in blender or food processor.

2. Add the rest of the ingredients to the blender or food processor and process until it forms a smooth batter (1 to 2 minutes)

3. Heat one Tbsp of coconut oil in a frying pan or on a griddle over medium-high heat. Pour batter into the the frying pan until your pancake is desired size.

4. Let cook 4-5 minutes on the first side, until the top looks fairly dry with little bubbles in it (just like regular pancakes!)

5. Flip! And cook on the second side for 1 1/2-2 minutes.

6. Repeat with remaining batter, adding more coconut oil to your pan as needed for cooking.

7. Top with butter/ghee, honey or fresh berries or other fruit.

 

It’s important for you to know that I am a pancake FIEND, and never thought I’d find a “Paleo Friendly” recipe to rival the pancakes of my youth. Well, this is it. Save it for the weekend, though, ’cause it still packs a punch and should be enjoyed as a treat. But make it, enjoy it and then go work it off with some play!
