Flu Season is really in full swing right now. How about fortifying yourself with a very easy and wonderful soup to get you through another weekend of getting after it?  Anna Thomas is a vegetarian cookbook author and seeing as how we can all use a few more veggies in our lives and we can definitely use something to help build immunity you should check out this easy recipe.  This soup tastes even better the next day–it won’t be as vibrantly green, but man does it really taste wonderful, so don’t feel bad about making “too much” on the first go around.  And, if you really want it to be Paleo, sub the regular potato for a Japanese Sweet Potatot (dark skinned/white interior).  GREEN SOUP.
