Chili Time

First, and quickly, don’t forget to reset your clocks.  The burpee rule still applies on the Monday after the time change!

We may actually have a few cold days of winter left.  If you’re like me, nothing sounds better than a big bowl of chili on a cold day.  Sue is hooking us up with another awesome paleo recipe:

Rotel Red (Chili)

1 1/2 pounds lean ground beef  I used Costco’s organic grass fed ground beef
1/2 chopped onion
10 oz. can tomatoes with green chilies, jalepenos, or just diced tomatoes
1 cup pumpkin puree
6 oz. can of tomato paste
2 cups water or beef broth I used Trader Joes organic beef broth
1 1/2 tbsp chili powder
1 tbsp cumin
1 tbsp cocoa powder
1 tsp onion powder
1 tsp powdered Mexican oregano
1/2 tsp salt or to taste

Chop onion. Brown onion and beef in a dutch oven. Drain fat if not using a lean grind of beef. Stir in tomatoes, pumpkin and tomato paste. Slowly add the can of water or beef broth while stirring. Add spices and cocoa. Simmer at least 30 minutes.  Check salt and serve.

Sue – I added chopped red bell peppers with the chopped onions, cayenne red pepper and simmered it for several hours instead of 30 minutes. Mmmm – chili deliciousness.
