Monday Meal Prep – Sweet Potato Bread

It’s getting to be the holiday season, so let’s cook with some fallish ingredients! I found this on the I Quit Sugar site and it’s now a favorite in our home. It’s even Whole 30 compliant for those of you who are sticking to the clean eating program.

One of the things I miss, a lot, is toast. In my family when I was growing up toast was everything. Breakfast, snacks, lunches, and then potatoes with dinner and cookies and cakes for dessert. I’ve moved on from all the desserts, but I still miss the toast! A piece of this sweet potato bread with a slab of butter hits and spot and warms my heart. I think you’ll like it too.
