Monday Meal Prep – Broccoli Salad:

Time for summer picnics and bar b q’s!  Did the host or hostess request you bring a side dish, or salad?  Here is an easy one that is always popular!

Servings: 4

Ingredients: Salad

  • 12 ounce bag broccoli florets, cut into uniform size
  • ¼ cup juice sweetened cranberries berries (avoid the sugar sweetened kind)
  • ¼ cup sprouted sunflower seeds or other nuts (almonds, etc)
  • 4 pieces bacon, cooked and chopped (No time? They now sell uncured bacon bits at whole foods, where they stock all the hummus and spreads…near the yogurt section)

Ingredients: Dressing

  •  1 cup paleo mayo (Primal Kitchen Foods brand or homemade…its so easy to make)
  • 1 tablespoon Bragg’s Apple Cider Vinegar
  • 1 tablespoon Brain Octane or MCT oiler or olive oil
  • 1 tablespoon shallot, minced
  • 1 teaspoon raw honey
  • Sea salt and ground pepper to taste

Instructions:

1.  In a medium bowl, add all salad ingredients.
2.  Separately, in a small bowl, add all dressing ingredients except S&P.
3.  Whisk until combined and then season to taste with S&P.
4.  Add dressing to salad and stir to ensure all broccoli is coated.
5.  Refrigerate for 30 min to allow flavors to mingle.
